Definition of Term

surimi
(english) A highly refined fish mince used as a base material for a large range of Japanese consumer products. Surimi is used for the industrial production of different fish products like kamaboko, fish sausage etc., including seafood analogue products such as crab sticks. Mixed with cryoprotectants such as sugar and sorbitol for an extended shelf life. (See also: sashimi)
